Erin made this today. Spicy and warm, it was ideal for a blustery, cloudy day.
1 c wild rice
1 c white rice
1 tbsp olive oil
3 4-oz links spicy turkey sausage
1 c chopped onion
1 c chopped carrots
1 c chopped green pepper
2 diced lemon peppers (any hot will do)
4 minced garlic cloves
1/2 c flour
2 c cubed sweet potatoes
1 tsp thyme
1 tsp oregano
1 qt vegetable or turkey broth
4 c diced tomatoes
2 c chopped cooked turkey
Cook rice separately. Mix together when done.
Half and then slice sausages. Brown ~10 mins in a deep stock pot. Add onion, carrots, peppers, garlic, and cook for 5 mins. Add flour and cook until browned (~5 mins). Add everything else except the turkey. Bring to a boil; simmer 30 minutes. Add turkey and simmer 10 minutes. Serve over rice mix.
Chicken is just fine if you don’t have turkey. Adding some shrimp and okra would be great, too.
