Ice cometh. The weather promises to get worse over the next 48 hours, with more ice and snow on the way.
Time to make soup! We’ve got a couple chicken carcasses in the freezer and enough vegetables to go with. My recipe for chicken soup has always been simple:
1 or more chicken carcasses
Whatever vegetables are handy
Make broth with chicken carcasses. Strain and discard bones. Chop up vegetables. Add ’em to broth. Spice well. Simmer overnight. Toss in some orzo in the last 20 minutes if you like.
